- 1/2 cup cooked chicken, shredded
- 1/2 ripe avocado, sliced
- 2 slices Monterey Jack cheese
- 1 tablespoon mayonnaise

- Pinch of salt and black pepper
Instructions
- Step 1: Prepare the ingredients. Ensure your cooked chicken is shredded or thinly sliced. Slice the avocado and set aside. Spread mayonnaise evenly on one side of each slice of sourdough bread.
- Step 2: Assemble the sandwich. Place one slice of bread (mayo-side up) on a clean surface. Layer one slice of Monterey Jack cheese, followed by the shredded chicken, then the sliced avocado. Season lightly with a pinch of salt and black pepper, then top with the second slice of Monterey Jack cheese. Place the other slice of bread on top, mayo-side down.
- Step 3: Cook the first side. Heat a large skillet or griddle over medium heat. Add the butter or olive oil to the pan and let it melt or heat through. Carefully place the assembled sandwich into the hot pan and cook for 3-4 minutes, or until the bottom slice of bread is golden brown.
- Step 4: Flip and melt the cheese. Using a spatula, carefully flip the sandwich to the other side. Cover the pan with a lid (if possible) to help the cheese melt thoroughly. Continue cooking for another 3-4 minutes, or until the second side is golden brown and the cheese is bubbly and completely melted.
- Step 5: Serve. Remove the Chicken Avocado Melt Sandwich from the pan. For easier eating, slice the sandwich in half diagonally. Serve immediately while hot and the cheese is gooey.
