Description

Saddle up for this hearty Frito Cowboy Cabbage! Browned beef and sweet onions mingle with shredded cabbage and spicy Rotel for a quick Dutch oven meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20 suggested)
  • 1 medium yellow onion, chopped
  • 1 head green cabbage, cored and shredded
  • 1 (10-ounce) can diced tomatoes with green chilies (Rotel)
  • 1 ounce packet chili seasoning mix
  • 1 teaspoon salt (or to taste)
  • 2 cups Fritos corn chips, lightly crushed

Instructions

  1. Step 1: Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chopped onion and sauté for 3-5 minutes until softened. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain off any excess grease.
  2. Step 2: Reduce the heat to medium. Stir in the chili seasoning mix, salt, and the can of diced tomatoes with green chilies. Cook for 1 minute, allowing the seasoning to toast lightly.
  3. Step 3: Add the shredded cabbage to the pot. Stir well to coat the cabbage in the chili mixture. The pot will be very full initially. Cover the pot and allow the cabbage to steam and wilt down for 10-15 minutes, stirring occasionally, until the cabbage reaches a tender-crisp texture.
  4. Step 4: Once the cabbage is tender, taste the mixture and adjust salt and pepper if necessary. Ensure the liquid has mostly evaporated, leaving a hearty, chili-like base.
  5. Step 5: Serve the Frito Cowboy Cabbage hot, portioning the mixture into bowls. Top each serving immediately and generously with the lightly crushed Fritos corn chips before eating.

Notes

  • Always store the Frito corn chips separately from the cabbage mixture to ensure maximum crunchiness when enjoying your leftovers.
  • Reheat leftovers gently on the stovetop over low heat, adding a splash of water or broth if the mixture seems too dry after refrigeration.
  • For a true "cowboy" experience, garnish bowls with a dollop of sour cream, shredded cheddar, or a dash of hot sauce before adding the final crushed Fritos layer.
  • Don't skip the brief seasoning toast in Step 2; cooking the chili powder directly in the fat for one minute blooms the spices, deeply enriching the overall flavor profile.
