- 1/2 cup sour cream
- 2 green onions, thinly sliced
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the diced potatoes with olive oil, salt, and pepper on a large baking sheet. Roast for 25-30 minutes, or until golden brown and tender, flipping halfway through.
- Step 2: While potatoes are roasting, brown the ground beef in a large skillet over medium-high heat. Drain any excess fat. Stir in the taco seasoning and 1/2 cup water. Bring to a simmer and cook for 5-7 minutes, or until the liquid has mostly absorbed and the meat is well-coated.
- Step 3: Divide the roasted potatoes evenly among 4 meal prep containers or bowls. Top each portion of potatoes with an equal amount of the seasoned ground beef.
- Step 4: Sprinkle the shredded cheddar cheese over the beef in each bowl. For meal prep, store the sour cream and green onions in small separate containers or add them fresh just before serving.
- Step 5: When ready to serve, reheat bowls in the microwave until warmed through and cheese is melted. Garnish with a dollop of sour cream and a sprinkle of fresh green onions.
