- 4 Tbsp olive oil, divided
- 3 Tbbed balsamic vinegar
- 4 cloves garlic, minced
- 1 large lemon, half juiced and half sliced
- 1 tsp dried oregano
- Salt and freshly ground black pepper, to taste
Instructions
- Step 1: Preheat the oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper for easier cleanup, if desired.
- Step 2: In a large mixing bowl, toss the halved potatoes with 2 tablespoons of olive oil, half of the minced garlic, the oregano, and a generous pinch of salt and pepper. Spread the potatoes in a single layer on the prepared sheet pan.
- Step 3: Add the chicken thighs to the remaining contents of the bowl. Add the remaining 2 tablespoons of olive oil, balsamic vinegar, remaining minced garlic, lemon juice, salt, and pepper. Toss until the chicken is fully coated.
- Step 4: Arrange the marinated chicken among the potatoes on the sheet pan, ensuring they are not heavily overlapping. Place the lemon slices on top of the chicken and potatoes.
- Step 5: Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and slightly crispy. Serve immediately.
