- 1 medium red bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 2 teaspoons Cajun seasoning (low sodium preferred)
- 1/4 cup honey
- 2 cups chicken broth (low sodium)
Instructions
- Step 1: Heat the olive oil in a large (10-12 inch) skillet over medium-high heat. Add the sliced sausage and cook until browned on both sides, about 4-5 minutes. Remove the sausage and set it aside, leaving the rendered fat in the skillet.
- Step 2: Reduce the heat to medium. Add the diced bell pepper and sauté for 4 minutes until softened. Stir in the minced garlic and the Cajun seasoning, cooking for 1 minute until fragrant.
- Step 3: Add the uncooked rice to the skillet, stirring to coat the grains with the seasoning and oil. Pour in the chicken broth and the honey. Bring the mixture to a rapid boil, stirring occasionally to dissolve the honey.
- Step 4: Once boiling, return the sausage to the skillet, distributing the pieces evenly over the rice. Reduce the heat to low, cover the skillet tightly, and let simmer for 18-20 minutes, or until all the liquid has been absorbed and the rice is tender.
- Step 5: Remove the skillet from the heat and let it rest, still covered, for 5 minutes. Remove the lid, fluff the rice gently with a fork, and serve immediately.
Notes
- Keep any leftovers sealed tightly in the fridge for up to three days, but make sure to cool the dish completely before sealing to prevent moisture buildup and sogginess.
- When reheating individual servings, sprinkle a tablespoon of chicken broth or water over the rice, cover loosely, and microwave until steaming to bring back a tender texture.
- Balance the sweet heat by serving this hearty skillet with a sprinkle of fresh chopped scallions and a drizzle of cool ranch dressing or a squeeze of fresh lime juice.
- Because Cajun seasonings and chicken broths vary greatly in sodium, taste your broth before adding the rice and reduce your Cajun seasoning by 1/2 teaspoon if you are using full-sodium ingredients.
