Description

Transform your morning with Pizza Eggs! Skillet-cooked eggs topped with rich pizza sauce, melted mozzarella, and spicy beef pepperoni create a surprisingly delicious, quick dish.

Ingredients

Scale
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1/4 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mini pepperonis or sliced regular beef pepperoni
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon dried oregano (optional)

Instructions

  1. Step 1: Heat a non-stick skillet (8-10 inch) over medium heat and add the olive oil. Allow the oil to heat gently until shimmering.
  2. Step 2: Carefully crack the eggs directly into the hot skillet, keeping them somewhat separated. Season them immediately with salt and black pepper.
  3. Step 3: Spoon the pizza sauce evenly over the egg whites, being careful not to break the yolks. Then, sprinkle the shredded mozzarella cheese and beef pepperoni slices over the sauce and eggs. Add dried oregano if desired.
  4. Step 4: Cover the skillet with a lid and cook for 3-5 minutes, or until the egg whites are fully set, the yolks are cooked to your desired consistency (runny, jammy, or firm), and the cheese is completely melted and bubbly.
  5. Step 5: Carefully slide the pizza eggs from the skillet onto individual plates. Serve immediately while hot.

Notes

  • Keep any untouched pizza eggs in an airtight container in the fridge for up to two days, knowing they shine brightest when fresh from the pan.
  • Gently warm leftovers in a microwave on a low setting or in a covered skillet over low heat; a tiny sprinkle of water helps keep them from drying out.
  • These savory pizza eggs pair wonderfully with a slice of warm, crusty bread for dipping, or lighten the meal with a crisp side salad.
  • Don't hesitate to personalize your pizza eggs; a sprinkle of red pepper flakes adds a nice kick, or fresh basil at the end offers an aromatic finish.
