Ingredients

  • 1 Large egg
  • 1 ½ cups White chocolate chips
  • ½ cup Salted caramel sauce, chilled

Instructions

  1. Step 1: Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper. In a medium bowl, whisk together the all-purpose flour, baking soda, and ½ teaspoon of salt.
  2. Step 2: In a large bowl, using an electric mixer, cream together the softened unsalted butter, granulated sugar, and light brown sugar until the mixture is light and fluffy. Beat in the large egg and 1 teaspoon of vanilla bean paste until well combined.
  3. Step 3: Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined and no streaks of flour remain. Fold in the white chocolate chips until evenly distributed throughout the dough.
  4. Step 4: Scoop rounded tablespoons of cookie dough and roll them into balls. Using your thumb or a spoon, create a small indentation in the center of each dough ball. Spoon about ½ teaspoon of the chilled salted caramel sauce into each well, then carefully enclose the caramel by sealing the dough around it. Place the sealed dough balls onto the prepared baking sheets.
  5. Step 5: Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers are just set. Let the cookies cool on the baking sheets for 5 minutes before carefully transferring them to a wire rack to cool completely. For an extra touch, sprinkle with a pinch of flaky sea salt while still warm.
