Description

Enjoy classic cabbage roll flavors without the fuss! This slow cooker delight combines savory beef, tender cabbage, and rice in a rich tomato sauce. Get full instructions & nutritional info here.

Ingredients

Scale
  • 1.5 lbs ground beef
  • 1 large head green cabbage (about 23 lbs), cored and chopped
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 cup uncooked long-grain white rice
  • 1 cup beef broth

Instructions

  1. Step 1: Brown the ground beef in a large skillet over medium-high heat until no longer pink. Drain any excess fat. Add the chopped onion and minced garlic to the skillet with the beef and cook, stirring occasionally, until the onion is softened, about 5-7 minutes.
  2. Step 2: Transfer the cooked beef and onion mixture to a 6-quart (or larger) slow cooker. Add about half of the chopped cabbage to the slow cooker, followed by the uncooked rice.
  3. Step 3: Pour in the crushed tomatoes, tomato sauce, and beef broth over the ingredients in the slow cooker. Top with the remaining chopped cabbage. Season generously with 1 teaspoon salt and 1/2 teaspoon black pepper, or to taste.
  4. Step 4: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the cabbage is very tender and the rice is fully cooked and has absorbed the liquid.
  5. Step 5: Before serving, stir the mixture well to ensure all ingredients are evenly distributed. Taste and adjust seasonings as needed. Serve hot as a complete, hearty meal.

Notes

  • Leftovers keep beautifully in an airtight container in the fridge for up to 3-4 days, making future meals effortless.
  • When reheating, gently warm portions in the microwave or on the stovetop; a splash of extra beef broth or water can help maintain its perfect texture.
  • Elevate your serving with a dollop of sour cream or a sprinkle of fresh dill or parsley for a bright, creamy finish that perfectly complements the hearty flavors.
  • Don't rush browning the ground beef and sautéing the onion and garlic; this crucial initial step builds a rich, foundational flavor that truly shines through in the finished dish.
