Description

Creamy, zesty Southwest Wraps! Shredded chicken, corn, and black beans bound by Greek yogurt—a no-cook filling miracle. Full instructions and nutrition included.

Ingredients

Scale
  • 1.5 cups pre-cooked chicken breast, shredded
  • 4 large whole wheat tortillas
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup frozen corn kernels, thawed
  • 1/4 cup plain Greek yogurt (low-fat)
  • 1/4 cup mild or medium salsa
  • 1 teaspoon Southwest or Fajita seasoning blend

Instructions

  1. Step 1: Prepare the filling mixture by combining the shredded chicken, black beans, corn, salsa, Greek yogurt, and Southwest seasoning in a medium mixing bowl.
  2. Step 2: Stir all ingredients thoroughly until the chicken and vegetables are evenly coated with the yogurt and seasoning mixture, ensuring all components are well distributed.
  3. Step 3: Lightly warm the whole wheat tortillas either in a microwave for 15 seconds or in a dry skillet for 30 seconds per side to make them more pliable and easier to roll.
  4. Step 4: Spoon approximately 1/4 of the prepared chicken mixture down the center of each warm tortilla, leaving a margin on the top and bottom edges.
  5. Step 5: Fold the left and right sides of the tortilla inward over the filling, and then tightly roll the wrap up from the bottom edge to the top. Slice diagonally and serve immediately.

Notes

  • To prevent soggy wraps, store any leftover filling in an airtight container for up to 3 days in the refrigerator; only roll the wraps right before serving.
  • If you need to warm the chilled filling, gently microwave it for 30-45 seconds, then give it a quick stir to re-emulsify the Greek yogurt base before spooning it into a fresh tortilla.
  • For extra freshness and crunch, serve these wraps alongside a handful of crushed tortilla chips and a squeeze of fresh lime juice over the open filling before you roll it up.
  • If you don't have Southwest seasoning, quickly create your own flavorful blend using 1/2 tsp cumin, 1/4 tsp smoked paprika, and a dash of chili powder.
