Description

Ditch the mayo! Our creamy Southwest wraps use non-fat Greek yogurt to bind shredded chicken, corn, and black beans. Fast, healthy, flavorful.

Ingredients

Scale
  • 1.5 cups cooked chicken breast, shredded
  • 4 large whole wheat tortillas
  • 1/2 cup canned black beans, rinsed and drained
  • 1/4 cup frozen corn, thawed
  • 1/4 cup plain non-fat Greek yogurt
  • 2 tablespoons salsa (mild or medium)
  • 1 teaspoon Southwest seasoning blend (or chili powder/cumin mix)
  • 1 cup shredded Romaine lettuce

Instructions

  1. Step 1: In a medium bowl, combine the shredded chicken, black beans, corn, Greek yogurt, salsa, and Southwest seasoning blend. Stir thoroughly until all ingredients are evenly mixed and the chicken is fully coated in the yogurt sauce.
  2. Step 2: Warm the whole wheat tortillas individually in a dry skillet over medium heat for about 30 seconds per side, or microwave briefly until they are soft and pliable. This prevents cracking when rolling.
  3. Step 3: Lay one warmed tortilla flat on a clean surface. Spoon approximately one-quarter of the chicken mixture horizontally down the center of the tortilla, leaving a slight margin at the edges.
  4. Step 4: Top the chicken mixture with a generous sprinkle of shredded Romaine lettuce, ensuring the lettuce covers the length of the filling.
  5. Step 5: Fold the left and right sides of the tortilla inward over the filling, then tightly roll the tortilla starting from the bottom edge upwards. Slice the finished wrap diagonally in half and serve immediately.

Notes

  • To keep these wraps fresh for meal prep, store the chicken filling and lettuce separately, assembling only 5 minutes before eating to avoid soggy tortillas.
  • As these wraps are typically best served cold, avoid microwaving the assembled product; if you desire warmth, gently heat the chicken mixture on the stovetop and let it cool slightly before stirring in the yogurt.
  • For a satisfying side, pair your wraps with crunchy baked tortilla chips and a scoop of fresh guacamole or a light black bean salad.
  • Chef’s Tip: To ensure maximum flavor and brightness, taste the chicken mixture before rolling and stir in a squeeze of fresh lime juice if the seasoning needs a final lift.
