- 1 lb boneless, skinless chicken breast
- 1 cup uncooked white rice
- 2 cups frozen corn kernels
- 1/4 cup mayonnaise or Mexican crema
- 1 lime, juiced and zested
- 2 tablespoons cotija cheese, crumbled
- 1 teaspoon chili powder (or Tajín)
- 1 tablespoon olive oil
Instructions
- Step 1: Cook the rice according to package directions and set aside. While the rice cooks, dice the chicken breast into 1-inch pieces, season generously with salt, pepper, and a pinch of chili powder.
- Step 2: Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set it aside.
- Step 3: Add the corn kernels to the same skillet and sauté for 5-7 minutes, stirring until the corn is heated through and lightly charred in spots.
- Step 4: Remove the corn from the heat. In a small bowl, combine the charred corn with the mayonnaise (or crema), the juice and zest of the lime, and half of the cotija cheese and chili powder. Stir well to fully coat the corn.
- Step 5: Assemble the bowls by layering the cooked rice, followed by the cooked chicken pieces, and topped generously with the street corn mixture. Garnish with the remaining cotija cheese and a final sprinkle of chili powder or Tajín.

- Store the leftover street corn mixture separately from the rice and chicken to prevent the rice from getting soggy and to keep the crema fresh.
