Ingredients

  • 4 slices sourdough or Texas toast bread
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 cup shredded sharp cheddar cheese (or a blend of cheddar and mozzarella)
  • 1 tablespoon fresh parsley, finely chopped
  • 1/4 teaspoon salt

Instructions

  1. Step 1: In a small bowl, combine the softened butter, minced garlic, chopped fresh parsley, and salt. Mix well until everything is evenly incorporated to create your garlic butter spread.
  2. Step 2: Take each slice of bread and generously spread the garlic butter mixture on one side. Flip two of the bread slices over so the unbuttered side is facing up.
  3. Step 3: Evenly divide the shredded cheese and pile it onto the unbuttered side of the two flipped bread slices. Place the remaining two bread slices (garlic-butter side facing out) on top of the cheese to form two sandwiches.
  4. Step 4: Heat a large non-stick skillet or griddle over medium heat. Carefully place the assembled sandwiches into the hot skillet, garlic-butter side down. Cook for 3-5 minutes, or until the bottom is golden brown and crispy.
  5. Step 5: Using a spatula, carefully flip each sandwich. Continue to cook for another 3-5 minutes on the second side, or until golden brown and the cheese is completely melted and bubbly. Remove from skillet, let rest for a minute, then slice and serve immediately.

Notes

  • This grilled cheese is truly best enjoyed fresh off the skillet, but if you have leftovers, wrap them tightly in foil and refrigerate for up to 1 day to maintain some freshness.
